Chicken Enchilada Soup

I made this for dinner last night and it was DELICIOUS!  And since I wasn't feeling well, it was the perfect dinner!  I didn't take any pictures (gonna have to get better about doing that so I can be a better blogger) but here is the recipe and some notes I have on it!

Chicken Enchilada Soup

2 cans cream of chicken soup
1 can enchilada sauce
2 cups milk
1 cup of cheese
9oz bag of frozen chicken strips, cooked and cut
crushed tortilla chips

In a 3 quart sauce pan, combine all ingredients except tortilla chips.  Heat over medium heat until cheese is melted.  Serve and top with tortilla chips.

See?  Super easy and soooo good! 

A Few Notes:

- This soup was very runny, and I like mine much thicker, so I ended up having to add quite a bit of flour to thicken it up.  Next time, I will try only using 1 cup of milk.

- Also, I think I will try it with low fat cheese and 98% fat free soup to make it a little healthier.  It's not incredibly unhealthy as it is, but it could be better!

- Matt added a little sour cream to his and said that made it even better!

Try it and enjoy!  I love recipes like that, because they are SO quick and easy.  And I usually have all the ingredients on hand, so I'm sure it will become a staple in our house!

  1. try taking out the milk all together. If you take out the milk.. add 1/4 cup flour you will be good to go.

    I would add 1/2 can of ch. broth... your 2 cans of cream chicken soup and no flour.


    Also, depending on how "cookish" you want to be.. I have a recipe for your own enchilada sauce (that is much healthier than canned) - Keep in mind anything in a can has preservatives and a ton of "unlisted" ingredients. **BPA is an industrially produced chemical commonly used in polycarbonate plastics and epoxy resins. BPA-containing resins are a common ingredient. Also the vitamens are taken out. So in other words you loose the healthy and add toxins.

    Nothing to truly worry about since America (including myself when it comes to broth) uses canned. Just a simple fact I felt like sharing

    Also, I saw that you have a ground beef hater in your house.. (I think I read that) You should try pork.. In many ways it is better than chicken for you.. (depending on the cut) I made FLANTAS tonight.. A deep friend mexican dish.. except of course I did NOT deep fry it.. I baked it.. Ill be posting later tonight or tomorrow about it. YUMMY!! .. I am going to take your recipe.. tweak it a little and make it though. It sounds good!!(and I love chicken)
